There is no single Resy release time. Each restaurant decides how far in advance it takes reservations and when each new date opens. For the hardest restaurants, knowing that schedule is the difference between a real chance and none at all, because most prime tables on a popular night are gone within minutes of opening.

Most restaurants use a rolling booking window. With a 21-day window, a new date becomes bookable every day, 21 days out.
